  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract (optional)
  • Fresh fruit for garnish (optional, such as small berries, kiwi slices, or mandarin segments)

Instructions

  1. Boil 1 cup (240 ml) of water. In a mixing bowl, pour 1 package (3 oz or 85 g) of jello powder and add the boiling water. Stir briskly for about 2 minutes until fully dissolved.
  2. Pour in 1 cup (240 ml) of cold water and stir gently to cool the mixture.
  3. Pour the mixture evenly into a shallow pan or bowl. Chill in the refrigerator for 30-40 minutes until firm but slightly soft.
  4. While the jello chills, whip 1 cup (240 ml) of heavy cream with 2 tablespoons powdered sugar and ½ teaspoon vanilla extract (if using) until soft peaks form.
  5. Cut or break the set jello into small cubes or chunks.
  6. In clear cups, layer jello pieces and whipped cream alternately, ending with whipped cream on top.
  7. Garnish with fresh berries or mint if desired.
  8. Chill the parfait cups in the refrigerator for at least 15 minutes before serving.

Notes

Use freshly whipped cream for best texture but store-bought whipped cream works for convenience. Chill jello until firm but still spoonable for clean layers. If whipped cream softens after layering, refrigerate again to firm up. For dairy-free, substitute coconut whipped cream. Sugar-free jello can be used to reduce sugar intake.
