A quick and easy banana muffin recipe using just six ingredients and one bowl, perfect for a healthy snack or breakfast with a moist texture and natural sweetness.

Ingredients

Scale
  • 3 medium ripe bananas, mashed
  • 1 ½ cups all-purpose flour (190 grams)
  • ½ cup granulated sugar (100 grams)
  • ⅓ cup unsalted butter, melted (75 grams)
  • 1 large egg, room temperature
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin or line it with paper liners.
  2. Mash the bananas in your mixing bowl with a fork or potato masher until mostly smooth but still a little chunky.
  3. Add the melted butter to the bananas and stir gently until combined. Let the butter cool slightly if too hot.
  4. Mix in the sugar and the egg until well blended and creamy.
  5. Sprinkle in the baking soda and cinnamon (if using), then gently fold in the flour. Mix just until combined.
  6. Spoon the batter evenly into the muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid tough muffins. Use ripe bananas for best flavor. Room temperature egg helps emulsify the batter. Check oven temperature if muffins brown too fast. Fresh baking soda is important for rise. Variations include adding chocolate chips, nuts, or using gluten-free flour.
