This easy roasted acorn squash with brown sugar butter is a simple yet stunning side dish that caramelizes into something irresistible. With a double-glaze technique, it’s the perfect balance of sweet and savory for fall gatherings or holiday dinners.

  • 2 medium acorn squash (about 1.5 pounds each)
  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter (½ stick)
  • ¼ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • Pinch of salt
  • Fresh thyme or rosemary sprigs (optional garnish)
  • Toasted pecans or walnuts (optional garnish)
  • Flaky sea salt (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. Carefully cut each acorn squash in half from stem to tip. Scoop out the seeds and stringy pulp with a metal spoon. Do not rinse the squash.
  3. Place the squash halves cut-side up on a parchment-lined baking sheet. Brush or drizzle the olive oil over the cut surfaces and insides of each half. Sprinkle evenly with the salt and pepper.
  4. Roast the squash for 25 minutes, cut-side up, until starting to soften and edges begin to brown.
  5. While the squash is roasting, combine the butter, brown sugar, cinnamon, nutmeg, cloves, and a pinch of salt in a small saucepan. Heat over medium-low, stirring frequently, until the butter is melted and the sugar is dissolved (about 2-3 minutes). Do not let it boil. Remove from heat and set aside.
  6. After the first roast, brush about half of the brown sugar butter mixture over the cut surfaces of the squash. Return to the oven and roast for another 15 minutes.
  7. Remove the pan from the oven. Brush or drizzle the remaining brown sugar butter over the squash. The squash should be fork-tender at this point; if still firm, give it another 5 minutes before glazing.
  8. Roast for a final 5-10 minutes, until the edges are caramelized and the butter mixture is bubbling and glossy.
  9. Let the squash rest on the pan for 5 minutes before serving. Transfer to a serving platter, spoon any pan juices over the top, and add garnishes if desired.

Notes

For a dairy-free version, use vegan butter or coconut oil. For a lower-sugar option, reduce brown sugar to 2 tablespoons, but caramelization will be less dramatic. The double-glaze technique (brushing partway through and again at the end) creates an incredible caramelized crust. Do not skip the 5-minute resting step to allow the glaze to set. Leftovers keep in an airtight container in the refrigerator for up to 4 days; reheat in a 350°F oven for about 10 minutes. Can be frozen for up to 3 months.
