A quick and easy pizza quesadilla that’s perfect for lunchboxes, featuring a crispy tortilla, melted cheese, and classic pizza flavors. It’s a crowd-pleaser that even picky eaters will love.

  • 2 flour tortillas (8-inch)
  • 2 tablespoons pizza sauce
  • 1/3 cup shredded mozzarella cheese
  • 68 pepperoni slices (optional)
  • Butter or olive oil (optional, for brushing pan)
  • Optional toppings: diced bell peppers, mushrooms, olives, cooked sausage crumbles, Italian seasoning

Instructions

  1. Heat a non-stick skillet over medium heat for about 2 minutes.
  2. Lay one tortilla flat. Spread 2 tablespoons pizza sauce evenly, leaving a small border. Sprinkle 1/4 cup mozzarella over sauce. Add pepperoni and other toppings. Top with a thin layer of cheese. Place second tortilla on top and press gently.
  3. Transfer assembled quesadilla to hot pan. Cook 3-4 minutes until bottom is golden brown and crispy.
  4. Flip carefully with a spatula. Cook other side 2-3 minutes until golden and cheese is melted.
  5. Transfer to cutting board. Let rest 1-2 minutes. Slice into 4 or 6 wedges with pizza cutter or knife.
  6. Let wedges cool completely before packing in lunchbox. Place in single layer; use parchment paper between layers if stacking.

Notes

For extra crispy results, don’t butter the pan. Let quesadilla rest before cutting to prevent cheese from sliding out. Reheat in a dry skillet or toaster oven for best texture.
