Instructions

  1. Whisk the dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  2. Cream the butter and sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2 minutes. Scrape down the sides once.
  3. Add the wet ingredients: Beat in the egg, vanilla extract, peppermint extract, and the dissolved instant coffee. Mix until just combined.
  4. Add the dry ingredients: Gradually add the flour mixture to the wet mixture, mixing on low speed until no streaks of flour remain. Do not overmix.
  5. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or overnight).
