These Easy Peach and Blueberry Cobbler Bars are a buttery, fruity summer dessert with a sturdy shortbread crust, jammy fruit filling, and a crunchy streusel topping. Perfect for BBQs, picnics, or a lazy Sunday afternoon.

  • 2 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup cold unsalted butter, cut into small cubes
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 3 cups fresh peaches, peeled and sliced into ½-inch wedges (about 4 medium peaches)
  • 1 cup fresh blueberries, rinsed and dried
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two opposite sides. Lightly grease the parchment.
  2. In a large bowl, whisk together flour, ¾ cup granulated sugar, brown sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or two forks until mixture resembles coarse meal with pea-sized butter pieces.
  3. In a small bowl, whisk together beaten egg and vanilla extract. Pour over flour-butter mixture and stir with a fork just until dough starts to come together (it will be shaggy).
  4. Reserve 1 ½ cups of the mixture for topping and refrigerate. Press remaining dough evenly into the prepared pan. Bake for 15-17 minutes until lightly golden and set.
  5. While crust bakes, prepare filling: In a large bowl, gently toss peaches and blueberries with ¼ cup sugar, cornstarch, lemon juice, and lemon zest (if using) until well coated.
  6. Spread fruit filling evenly over the hot crust. Sprinkle reserved crust mixture evenly over the fruit.
  7. Bake for 35-40 minutes until top is golden brown and fruit filling bubbles around edges. If top browns too quickly, tent with foil for last 10 minutes.
  8. Cool completely in pan on a wire rack (at least 2 hours). Use parchment overhang to lift slab out of pan. Cut into squares.

Notes

Keep butter cold for flaky crust. Don’t overmix dough. Let bars cool completely before cutting to allow filling to set. Can be made a day ahead for best results. For extra juicy peaches, add an extra teaspoon of cornstarch.
