Instructions

  1. Preheat your oven to 325°F (163°C). Line your 9×9-inch pan with parchment paper, leaving an overhang on the sides to help lift bars out later.
  2. Make the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press it firmly into the bottom of the prepared pan in an even layer.
  3. Bake the crust for 10 minutes until lightly golden and toasty. Remove and let cool slightly.
  4. Prepare the cheesecake filling: In a large bowl, beat softened cream cheese with sugar until smooth and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract and sour cream until just combined.
  5. Pour the filling over the crust and spread evenly with a spatula.
  6. Bake at 325°F (163°C) for 35 to 40 minutes, until edges are set but center jiggles slightly when shaken gently.
