Easy One-Pan Ground Beef and Rice Dinner

A quick and easy one-pan ground beef and rice skillet dinner that comes together in about 30 minutes. Perfect for busy weeknights, this comforting dish is made with simple ingredients and builds flavor layer by layer in the same skillet.

  • 1 lb (450g) ground beef (80/20 recommended)
  • 1 cup (200g) long-grain white rice (uncooked)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz / 400g) diced tomatoes (fire-roasted preferred)
  • 2 cups (480ml) beef broth (low-sodium)
  • 1 medium green bell pepper, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients first: dice the onion and bell pepper, mince the garlic, and measure out the rice, broth, and spices.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5-6 minutes, breaking it apart, until browned and no longer pink. Leave about a tablespoon of fat in the pan.
  3. Add the diced onion and bell pepper to the skillet. Cook for 3-4 minutes, stirring often, until the onion is translucent and the pepper softens.
  4. Stir in the minced garlic, tomato paste, oregano, smoked paprika, salt, and pepper. Cook for 1 minute, stirring constantly, until fragrant.
  5. Pour in the diced tomatoes with their juices and the Worcestershire sauce. Stir, scraping up any browned bits from the bottom of the pan.
  6. Add the uncooked rice and stir to coat it with the tomato mixture. Let it toast for about 1 minute.
  7. Pour in the beef broth and stir until well combined. Bring the mixture to a boil.
  8. Reduce the heat to low, cover the skillet with a tight-fitting lid, and let it simmer for 18-20 minutes. Do not lift the lid during this time.
  9. After 18 minutes, remove the lid and check the rice. It should be tender and have absorbed most of the liquid. If the rice is still hard, cover and cook for 2-3 more minutes. If dry, add ¼ cup of water and continue cooking.
  10. Remove from heat and let it rest, covered, for 5 minutes.
  11. Fluff the mixture with a fork. Taste and adjust seasoning if needed. Garnish with fresh parsley if desired.

Notes

Don’t lift the lid while the rice is cooking to ensure perfect texture. For best results, use long-grain white rice (not instant). Leftovers keep in the refrigerator for up to 4 days and freeze for up to 3 months. The dish is even better the next day as flavors meld.
