This classic banana bread with walnuts is made in one bowl with no mixer required. It’s incredibly moist, tender, and packed with banana flavor and crunchy walnuts.

  • 3 to 4 ripe bananas, mashed (about 1 ½ cups / 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (60g) chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray, then line it with a strip of parchment paper that hangs over the two long sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Add the melted butter and granulated sugar to the mashed bananas. Stir until well combined.
  4. Mix in the room-temperature egg and vanilla extract until fully incorporated.
  5. Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Stir gently until no dry flour remains. Do not overmix.
  6. Fold in the chopped walnuts with just a few strokes.
  7. Pour the batter into the prepared loaf pan and spread into an even layer. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  9. Cool in the pan for 10 minutes, then use the parchment sling to lift the loaf onto a cooling rack. Cool completely before slicing, about 1 hour.

Notes

For best results, use very ripe bananas with brown spots. Toast walnuts before adding for extra crunch. Let the bread cool completely before slicing to avoid a gummy texture. The flavor improves on day two.
