  • 1 cup natural peanut butter (250g), creamy preferred
  • ¼ cup honey (85g)
  • 2 tbsp chia seeds (optional)
  • 1 tsp vanilla extract
  • ¼ cup mini chocolate chips (45g, optional)
  • Pinch of sea salt

Instructions

  1. Gather and measure your ingredients.
  2. In a large bowl, combine the peanut butter and honey. Stir gently until smooth and well blended, about 1-2 minutes. Warm peanut butter slightly if too stiff.
  3. Add the vanilla extract and sea salt. Mix thoroughly.
  4. Stir in the rolled oats and chia seeds using a sturdy spoon or spatula until the mixture is sticky but firm enough to hold shape.
  5. Fold in the mini chocolate chips if using.
  6. Chill the mixture in the fridge for 10-15 minutes to make rolling easier.
  7. Scoop out tablespoon-sized amounts and roll them between your palms into 1 inch (2.5 cm) diameter balls.
  8. Place the balls on a parchment-lined baking sheet or plate and chill again for at least 30 minutes to firm up before serving.

Notes

Use old-fashioned rolled oats for best texture. Warm peanut butter slightly if too stiff. Chill mixture before rolling to prevent stickiness. Add water or more honey if mixture is too dry; add more oats if too wet. Store in airtight container in fridge up to one week or freeze for up to three months.
