Instructions

  1. Measure out 1 cup (90g) of rolled oats, 1/2 cup (125g) of natural peanut butter, 1/3 cup (113g) honey, and 1 teaspoon (5ml) vanilla extract.
  2. In a mixing bowl, add the peanut butter, honey, and vanilla extract. Stir gently until smooth and well combined, about 1-2 minutes. Microwave peanut butter for 10-15 seconds if stiff.
  3. Gradually mix in the rolled oats until all oats are coated evenly and the mixture is sticky but holds together when pressed. Adjust with a teaspoon of honey if too dry or a tablespoon of oats if too wet.
  4. Roll the mixture into bite-sized balls about 1 inch (2.5 cm) in diameter using hands or a small cookie scoop. This recipe yields roughly 12 bites.
  5. Place the bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
