Ingredients

  • Large flour tortillas (8-inch size)
  • Deli-sliced turkey breast (about 8 slices, roughly 4 ounces / 115 grams)
  • Cream cheese (4 ounces / 115 grams, softened)
  • Fresh baby spinach leaves (about 1 cup / 30 grams)
  • Shredded carrot (optional, ½ cup / 50 grams)
  • Thinly sliced cucumber (optional, ½ cup / 50 grams)
  • Salt and pepper (to taste)
  • Dijon mustard or honey mustard (1 tablespoon, optional)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15-20 minutes or microwave in 5-second bursts until spreadable.
  2. Rinse and pat dry the baby spinach leaves. Thinly slice the cucumber and shred the carrot if using. Set aside.
  3. Place one 8-inch tortilla flat on a cutting board.
  4. Spread about 2 tablespoons (30 grams) of softened cream cheese evenly over the tortilla, leaving a small border around the edges.
  5. If desired, spread a thin layer (about 1 teaspoon) of Dijon or honey mustard over the cream cheese.
  6. Arrange 4 slices (about 2 ounces / 57 grams) of deli turkey evenly over the cream cheese without overlapping too thickly.
  7. Sprinkle baby spinach leaves, shredded carrot, and cucumber slices evenly over the turkey. Season lightly with salt and pepper.
  8. Roll the tortilla tightly into a log shape, pressing gently to keep everything compact.
  9. Using a sharp knife, cut the rolled tortilla into 1-inch (2.5 cm) slices to make about 8 pinwheels per wrap.
  10. Serve immediately or pack into a lunchbox with a napkin to keep them snug and prevent rolling around.
