A lighter, healthier twist on classic apple crisp made with Greek yogurt and almond flour instead of butter. This quick and easy dessert delivers warm, spiced apples with a nutty oat topping and salted caramel drizzle in about 40 minutes.

  • 3 tablespoons maple syrup

  • 1 cup rolled oats
  • ½ cup almond flour
  • ¼ cup packed light brown sugar
  • ¼ cup plain Greek yogurt
  • 3 tablespoons coconut oil, melted
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup store-bought salted caramel sauce
  • Optional: flaky sea salt for finishing

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 8×8-inch baking dish with a little coconut oil or nonstick spray.
  2. Prepare the apples. Peel, core, and slice your apples into ¼-inch thick pieces. Toss them in a large bowl with the lemon juice right away to prevent browning. Add the maple syrup, cinnamon, nutmeg, cornstarch, and salt. Mix well with a rubber spatula until every slice is coated. Let this sit while you make the topping.
  3. Make the topping. In a medium bowl, combine the rolled oats, almond flour, brown sugar, and salt. Stir with a fork to break up any clumps. Add the Greek yogurt, melted coconut oil, and vanilla extract. Use your hands or a spatula to mix until everything comes together into a crumbly, slightly sticky mixture. Don’t overmix.
  4. Assemble the crisp. Pour the apple mixture into your prepared baking dish and spread it into an even layer. Sprinkle the topping evenly over the apples. Don’t press it down. Drizzle half of the salted caramel sauce over the top. Reserve the rest for serving.
  5. Bake. Place the dish on a baking sheet and bake for 30-35 minutes, until the topping is golden brown and the apples are bubbling around the edges. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
  6. Cool and serve. Let the crisp cool on a wire rack for at least 10 minutes. Warm the remaining caramel sauce and drizzle it over the top. Sprinkle with flaky sea salt if desired. Serve warm.

Notes

Don’t skip the cornstarch—it helps thicken the juices. Let the crisp rest for 10 minutes after baking to allow the juices to thicken. If your topping looks too dry before baking, add another tablespoon of yogurt. If it looks too wet, add a tablespoon more oats. The texture should be like damp sand—crumbly but holds together when squeezed.
