Easy Lighter Bacon Cornbread with Green Tomatoes

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sugar
  • 1 cup plain Greek yogurt
  • 1/3 cup milk
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 6 slices thick-cut bacon
  • 1 cup green tomatoes, diced into 1/4-inch pieces
  • 1/2 cup sharp cheddar cheese, shredded (optional)
  • 2 green onions, sliced thin

Instructions

  1. Preheat your oven to 400°F (200°C). Place your cast iron skillet inside while it preheats.
  2. Cook the bacon until crispy, about 6-8 minutes over medium heat. Transfer to a paper towel-lined plate to drain. Once cool, crumble into small pieces. Reserve 1 tablespoon of bacon fat.
  3. Dice green tomatoes into 1/4-inch pieces. Pat dry with a paper towel to remove excess moisture. Set aside.
  4. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, pepper, and sugar.
  5. In a separate medium bowl, whisk together Greek yogurt, milk, eggs, melted butter, olive oil, and reserved bacon fat until smooth.
  6. Pour wet ingredients into dry ingredients and stir with a spatula until just combined. Fold in crumbled bacon, diced green tomatoes, shredded cheddar (if using), and sliced green onions.
  7. Carefully remove the hot skillet from the oven. Add a tablespoon of butter and swirl until melted and coating the bottom and sides.
  8. Pour batter into the hot skillet and spread evenly. Bake for 20-25 minutes, until golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let cool in the skillet for 5-10 minutes before slicing. Serve warm.

Notes

Don’t overmix the batter. Pat tomatoes dry to avoid sogginess. Use room temperature eggs. If cornbread browns too quickly, tent with foil for last 5 minutes. For best texture, reheat in oven or skillet.
