This easy leftover turkey and cranberry panini is the perfect way to transform holiday leftovers into a warm, melty, and delicious sandwich in just 5 minutes.   • 2 slices sourdough, ciabatta, or thick country bread
  • 46 ounces leftover turkey, thinly sliced or shredded
  • 23 tablespoons cranberry sauce (whole berry or jellied)
  • 23 slices sharp cheddar, provolone, or brie
  • 1 tablespoon butter, softened
  • Optional: handful fresh spinach, few slices apple, or caramelized onions

Instructions

  1. Preheat your panini press to medium-high heat or a skillet over medium heat until a drop of water sizzles.
  2. Spread softened butter on one side of each bread slice (the outside of the sandwich).
  3. On the unbuttered side of one bread slice, spread 2-3 tablespoons of cranberry sauce, leaving a small border.
  4. Layer the leftover turkey evenly over the cranberry sauce.
  5. Place cheese slices on top of the turkey.
  6. Close the sandwich with the second bread slice, buttered side facing up. Gently press down.
  7. Transfer the sandwich to the hot pan or press. If using a skillet, place a heavy pot or skillet on top to press. Cook for 2-3 minutes until golden brown and crispy.
  8. Flip the sandwich carefully. If using a press, close the lid. If using a skillet, replace the weight. Cook for another 2-3 minutes until the second side is golden and cheese is melted.
  9. Check for doneness: bread should be deeply golden and crispy, cheese oozing slightly. If bread browns too fast, reduce heat and cook longer.
  10. Let the panini rest for 30 seconds on a cutting board, then slice diagonally and serve immediately.

Notes

Don’t use too much cranberry sauce (2-3 tablespoons is the sweet spot) to avoid sogginess. Let turkey sit out for 5-10 minutes before assembling to ensure even heating. For best results, use sourdough bread for maximum crunch. Let the sandwich rest 30 seconds before cutting to keep cheese inside.
