  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1/4 cup (60 ml) olive oil (extra virgin recommended)
  • 1/4 cup (60 ml) freshly squeezed lemon juice
  • 3 cloves garlic, minced

Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together olive oil, lemon juice, and minced garlic until well combined and slightly emulsified.
  2. Marinate the chicken: Place chicken breasts in the bowl or a resealable plastic bag, pour marinade over them, coat evenly, cover or seal, and refrigerate for at least 30 minutes up to 2 hours.
  3. Preheat your grill to medium-high heat (around 400°F / 205°C).
  4. Grill the chicken: Remove chicken from marinade and shake off excess. Place on grill and cook for 6-7 minutes per side, flipping once.
  5. Check for doneness using an instant-read thermometer; internal temperature should reach 165°F (74°C).
  6. Rest the chicken: Transfer to a plate, cover loosely with foil, and let rest for 5 minutes before serving.

Notes

Do not marinate longer than 2 hours to avoid the lemon juice ‘cooking’ the chicken and changing its texture. Pat chicken dry before grilling to prevent flare-ups. Let chicken rest after grilling to keep it juicy. If browning too fast, move chicken to a cooler part of the grill. Marinade can be prepared a day ahead but add fresh garlic when ready to marinate.
