This healthy turkey meatloaf is moist, flavorful, and packed with lean protein and veggies. It’s an easy, crowd-pleasing dinner that proves you don’t have to sacrifice flavor to eat well.

  • 1 cup rolled oats
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, grated
  • 3 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar
  • 3 medium carrots, peeled and cut into 1-inch chunks
  • 2 medium zucchini, cut into half-moons
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line your loaf pan with parchment paper, leaving some overhang on the long sides.
  2. Toss the chopped carrots, zucchini, red bell pepper, and red onion on a baking sheet. Drizzle with 2 tablespoons of olive oil, then sprinkle with 1 teaspoon dried rosemary, ½ teaspoon salt, and ½ teaspoon black pepper. Toss to coat evenly and spread in a single layer. Set aside.
  3. In a large mixing bowl, combine 2 pounds of ground turkey, 1 cup of rolled oats, 2 beaten eggs, the grated onion, 3 minced garlic cloves, 3 tablespoons of tomato paste, 2 tablespoons of Worcestershire sauce, 1 tablespoon of Dijon mustard, 1 teaspoon of dried thyme, 1 teaspoon of salt, and ½ teaspoon of black pepper. Mix with your hands until just combined—do not overwork.
  4. Transfer the mixture to the prepared loaf pan. Press down gently and evenly, smoothing the top with the back of a spoon.
  5. In a small bowl, whisk together ½ cup of ketchup, 2 tablespoons of brown sugar, and 1 teaspoon of apple cider vinegar. Spread about half of this glaze over the top of the meatloaf, reserving the rest.
  6. Place the loaf pan on the middle rack and the baking sheet of vegetables on the lower rack. Bake for 35 minutes.
  7. Remove both from the oven. Brush the remaining glaze over the meatloaf. Stir the vegetables. Return to the oven for another 20-25 minutes.
  8. Check for doneness: the meatloaf is done when an instant-read thermometer inserted into the center reads 165°F (74°C). The vegetables should be tender and caramelized.
  9. Let the meatloaf rest in the pan for 10 minutes. Use the parchment overhang to lift it out, then transfer to a cutting board. Slice into 8 even pieces.
  10. Serve the meatloaf slices alongside the roasted vegetables. Spoon any pan juices from the vegetables over the top.

Notes

Don’t skip the grated onion—it adds moisture. Use a meat thermometer to avoid overcooking. Let the meatloaf rest for 10 minutes before slicing to keep it from falling apart. For a gluten-free version, use certified gluten-free rolled oats. The roasted vegetables can be swapped for other seasonal veggies like broccoli, sweet potatoes, or Brussels sprouts.
