Easy Graveyard Taco Dip with Guacamole Tombs

A quick and fun Halloween appetizer featuring layers of seasoned beef, creamy cheese, and guacamole shaped into tombs with tortilla chip headstones. Perfect for last-minute parties and guaranteed to be a crowd-pleaser.

  • 1 pound ground beef (80/20)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 can (16 ounces) refried beans
  • 1 cup salsa (mild or medium)
  • 3 ripe avocados
  • 1/2 lime, juiced
  • 1/4 cup finely diced red onion
  • 1 small Roma tomato, seeded and diced
  • 1/4 teaspoon salt
  • A handful of fresh cilantro, chopped (optional)
  • Large tortilla chips (Scoops or Restaurant Style)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced black olives
  • Optional: Sour gummy worms

Instructions

  1. Brown the beef: Heat a skillet over medium-high heat. Add ground beef and cook for 6-8 minutes until browned. Drain excess fat. Reduce heat to low, add taco seasoning and water, stir, and simmer for 2-3 minutes until thickened. Set aside to cool slightly.
  2. Make the guacamole: Cut avocados in half, remove pits, and scoop flesh into a bowl. Add lime juice and salt, mash with a fork until mostly smooth with some chunks. Fold in onion, tomato, and cilantro. Adjust seasoning to taste. Cover with plastic wrap pressed against the surface and set aside.
  3. Prep cream cheese layer: In a small bowl, beat softened cream cheese until smooth. Add sour cream and stir until fully combined. Set aside.
  4. Assemble base layers: Spread refried beans evenly in a 9×13-inch dish. Spread cream cheese mixture over beans. Spoon salsa over cream cheese layer and spread gently. Sprinkle shredded cheddar cheese over salsa.
  5. Add meat and guacamole tombs: Spread seasoned beef over cheese layer. Shape guacamole into 3-4 small mounds on top of beef, forming tomb-like ovals.
  6. Decorate the graveyard: Stick a large tortilla chip vertically into each guacamole tomb. Scatter sliced black olives around. Tuck gummy worms into edges if using.
  7. Serve immediately at room temperature with extra tortilla chips.

Notes

Don’t overwork the guacamole; chunky is better. Let beef cool before adding guacamole to prevent it from warming. Cream cheese must be truly soft for easy spreading. Lime juice in guacamole helps prevent browning. Assemble no more than 2 hours before serving for best results.
