Instructions

  1. Preheat oven to 350°F (175°C). Peel peaches and slice into 1/2-inch thick wedges.
  2. Toss sliced peaches with granulated sugar, lemon juice, cinnamon, vanilla extract, and cornstarch in a mixing bowl. Mix gently until coated and set aside.
  3. In a separate bowl, combine oats, flour, brown sugar, cinnamon, and salt.
  4. Cut in cold cubed butter using a pastry cutter or two forks until mixture resembles coarse crumbs with some pea-sized bits.
  5. Optional: Toast oat mixture in a dry skillet over medium heat for 3-4 minutes, stirring frequently, then cool slightly.
  6. Transfer peach mixture to a 9×9-inch baking dish and spread evenly.
  7. Sprinkle oat topping evenly over peaches.
