A quick, no-cook snack featuring cherry tomatoes, fresh mozzarella, and basil leaves drizzled with olive oil and balsamic glaze. Perfect for summer afternoons or last-minute guests.

Ingredients

  • 20 cherry tomatoes, washed and dried
  • 20 fresh mozzarella balls (Bocconcini or Ciliegine), drained
  • 20 fresh basil leaves, whole
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • About 20 wooden skewers or toothpicks

Instructions

  1. Rinse cherry tomatoes and basil leaves under cold water and pat dry with a clean towel. Drain mozzarella balls thoroughly.
  2. Optional: Place cherry tomatoes in a bowl, drizzle with 1 tablespoon olive oil, add a pinch of salt and pepper, and toss gently to coat.
  3. Thread one cherry tomato, a folded basil leaf, and one mozzarella ball onto each skewer or toothpick. Repeat until all ingredients are used.
  4. Arrange skewers on a serving platter. Drizzle remaining olive oil evenly over the top, then add balsamic glaze in thin ribbons.
  5. Sprinkle a small pinch of salt and freshly ground black pepper over the skewers. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

Use fresh mozzarella for best texture; pat all ingredients dry to avoid sogginess. Drizzle balsamic glaze just before serving to keep skewers fresh. For vegan option, substitute mozzarella with firm tofu or plant-based cheese.
