Instructions

  1. Wash and dice the Roma tomatoes into small, even pieces (about 1/4-inch). Place in a medium bowl.
  2. Add the minced garlic and chopped fresh basil to the tomatoes. Toss gently to combine.
  3. Drizzle in 2 tablespoons of extra virgin olive oil, then season with sea salt and freshly ground black pepper to taste. Stir gently without mashing the tomatoes.
  4. Slice the baguette into 1/2-inch thick pieces and place on a baking sheet or grill pan.
  5. Toast the bread slices under the broiler or on medium-high heat in a skillet for about 2-3 minutes per side until golden and crispy. Watch closely to avoid burning.
  6. Optionally, rub each toasted bread slice with a cut garlic clove for subtle garlic aroma.
  7. Spoon the tomato mixture generously onto each toasted bread slice and arrange on a serving platter.
  8. Drizzle a little more olive oil over the assembled bruschettas and garnish with whole basil leaves if desired.

Notes

Drain excess tomato juice if tomatoes are watery to prevent soggy bread. Assemble bruschetta just before serving to keep bread crisp. Use day-old bread for better texture. Toast bread carefully to avoid burning. Rub toasted bread with garlic clove for added flavor.
