A quick and easy peach cobbler made with canned peaches and vanilla cake mix, perfect for a warm, comforting summer dessert with minimal prep and fuss.

Ingredients

Scale
  • 2 cans (15 oz each) sliced peaches in juice, drained partially
  • 1 box (15.25 oz) dry vanilla cake mix
  • 1 stick (8 tablespoons, 113 grams) unsalted butter, melted
  • 1 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons granulated sugar (optional)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Drain the canned peaches, reserving about 2 tablespoons of the juice. Stir the peaches gently with lemon juice, cinnamon, and nutmeg in the baking dish to evenly distribute the flavors.
  3. In a medium bowl, combine the vanilla cake mix and granulated sugar (if using). Pour in the melted butter and stir quickly until the mixture looks crumbly but moist.
  4. Sprinkle the cake mix mixture evenly over the peaches in the baking dish.
  5. Bake for 35-40 minutes until the top is golden and slightly crispy and the fruit is bubbling around the edges.
  6. Let the cobbler rest for about 10 minutes before serving to allow the juices to thicken.

Notes

If the top browns too quickly, tent the dish with foil halfway through baking. Let the cobbler cool slightly before serving to avoid a messy plate. For extra indulgence, serve with vanilla ice cream. You can swap canned peaches for fresh peaches in season, or use gluten-free cake mix and dairy-free butter substitutes for dietary adaptations.
