A tender, flavorful meatloaf made in the slow cooker with a sweet-and-savory brown sugar glaze. Perfect for busy weeknights, this recipe turns skeptics into believers with minimal effort.

  • 1 ½ pounds ground beef (80/20)
  • ½ pound ground pork
  • 1 cup plain breadcrumbs (Panko preferred)
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, grated
  • 3 cloves garlic, minced
  • ⅓ cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (kosher preferred)
  • ½ teaspoon black pepper, freshly ground
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup ketchup
  • ⅓ cup packed brown sugar (light or dark)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder

Instructions

  1. Line a 6-quart slow cooker with parchment paper or aluminum foil, leaving overhang for easy removal. Lightly spray with nonstick cooking spray.
  2. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, 1 teaspoon Worcestershire sauce, and garlic powder to make the glaze. Set aside.
  3. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, eggs, grated onion, minced garlic, milk, 2 tablespoons Worcestershire sauce, smoked paprika, salt, black pepper, and cayenne pepper (if using). Mix gently with your hands until just combined (about 30 seconds).
  4. Turn the meat mixture onto the lined slow cooker and shape into a loaf about 8 inches long and 4 inches wide.
  5. Brush about half of the glaze over the top and sides of the meatloaf. Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours. About 30 minutes before the end, brush the remaining glaze over the top.
  6. Carefully lift the meatloaf out using the parchment overhang. Transfer to a cutting board and let rest for 10 minutes. Slice into 1-inch thick pieces and serve with extra glaze spooned over the top.

Notes

For best results, use 80/20 ground beef and grate the onion instead of chopping. Don’t overmix the meat. Let the meatloaf rest for 10 minutes before slicing. The glaze can be doubled if you like extra for dipping.
