A quick and easy overnight oats recipe with creamy peanut butter and sweet banana, perfect for busy mornings. This no-cook breakfast is naturally sweetened and packed with fiber and protein.

  • 1 cup (90g) rolled oats
  • 1 large very ripe banana (with brown spots)
  • 2 tablespoons (32g) creamy peanut butter
  • 3/4 cup (180ml) milk of choice (whole, oat, or almond)
  • 1 tablespoon (15ml) maple syrup (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. Mash the banana in a mixing bowl until almost liquid, with no large chunks.
  2. Add peanut butter, milk, maple syrup, and vanilla extract to the mashed banana. Whisk until smooth and well combined.
  3. Add rolled oats, chia seeds, and a pinch of salt. Stir until all oats are evenly coated and no dry spots remain.
  4. Divide the mixture evenly into two mason jars or airtight containers, leaving about 1/2 inch of space at the top.
  5. Screw on lids and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, peanut butter drizzle, chopped peanuts, and cinnamon if desired. Serve cold or at room temperature.

Notes

Use a very ripe banana for natural sweetness. If peanut butter is thick, warm it for 10-15 seconds before mixing. For thicker oats, reduce milk by 2 tablespoons; for thinner, add more milk. Oats keep in the fridge for up to 5 days and taste even better on the second day.
