Instructions

  1. Preheat oven to 400°F. Line a baking sheet with foil and lay bacon slices in a single layer. Bake for 15-18 minutes until crispy. Transfer to paper towels to drain, then crumble or chop into bite-sized pieces. Reserve 2 tablespoons of bacon grease.
  2. In a large Dutch oven or heavy-bottomed pot, melt butter with reserved bacon grease over medium heat. Add diced onion and cook for 4-5 minutes until translucent and starting to brown. Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle flour over the onion mixture and stir constantly for 1-2 minutes until lightly golden and nutty-smelling.
  4. Slowly pour in chicken broth while whisking continuously to prevent lumps. Add milk and heavy cream. Bring to a gentle simmer, stirring occasionally, until slightly thickened like a thin gravy.
