These Easy Creamy Cucumber Cream Cheese Tea Sandwiches are quick, simple, and perfect for parties or casual get-togethers. They feature a creamy, flavorful spread with fresh cucumber slices on soft white bread.

Ingredients

Scale
  • 12 slices white sandwich bread, crusts removed
  • 8 oz (225g) cream cheese, softened
  • 1 large English cucumber, thinly sliced
  • 1 tablespoon fresh dill, finely chopped
  • Zest of half a lemon
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • Optional: 1 teaspoon mayonnaise
  • Optional: A few drops of white vinegar

Instructions

  1. In a medium bowl, combine softened cream cheese, chopped fresh dill, and lemon zest. Add a pinch of salt and freshly ground black pepper to taste. Mix well until smooth. (5 minutes)
  2. Slice the cucumber into thin, even rounds about 1/8 inch (3 mm) thick using a mandoline or sharp knife. Lay slices on paper towels and pat dry to remove excess moisture. (5-7 minutes)
  3. Lay out 12 slices of white sandwich bread and carefully cut off the crusts using a serrated knife to create neat rectangles. (3 minutes)
  4. Spread about 1 tablespoon of the cream cheese mixture evenly on each bread slice, covering the entire surface. (5 minutes)
  5. Arrange cucumber slices over half of the bread slices, overlapping slightly but not piling too thickly. (3 minutes)
  6. Place the remaining bread slices, cream cheese side down, over the cucumber-layered slices to form sandwiches. Press gently to seal. Cut each sandwich into triangles or fingers as preferred. (5 minutes)
  7. Place sandwiches on a serving platter, cover with a damp cloth or plastic wrap, and refrigerate for at least 15 minutes before serving to let flavors meld and bread firm up. (15 minutes resting)

Notes

Let cream cheese soften at room temperature for at least 30 minutes for easier spreading. Pat cucumber slices dry to prevent soggy sandwiches. Refrigerate sandwiches for at least 15 minutes before serving to meld flavors and firm bread. Use gluten-free bread or dairy-free cream cheese for dietary adaptations.
