Instructions

  1. Soften the cream cheese by removing it from the fridge about 30 minutes ahead or microwave in 10-second bursts until just soft but not melted.
  2. Grate the sharp cheddar cheese finely.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, and chopped chives. Mix with a hand mixer on low speed until smooth and creamy but still firm, or stir vigorously with a spoon until well combined.
  4. Lay out plastic wrap or parchment paper. Scoop the cheese mixture onto the center and shape it into a ball using the wrap.
  5. Spread chopped pecans or walnuts on a plate. Unwrap the cheese ball and roll it gently in the nuts until evenly coated, pressing lightly so nuts stick well.
  6. Wrap the coated cheese ball tightly in plastic wrap and refrigerate for at least 1 hour to firm up and meld flavors.
  7. Remove from fridge 10 minutes before serving to soften slightly. Serve with crackers, sliced baguette, or fresh veggies.
