  • 2 cups low-sodium vegetable broth or chicken broth

  • 1 tablespoon maple syrup or honey (optional)
  • Fresh cilantro, chopped (for garnish, optional)

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat until shimmering (about 30 seconds).
  2. Add the diced onion and cook, stirring occasionally, until translucent and softened (about 5 minutes). Do not let it brown.
  3. Stir in the minced garlic and grated ginger; cook for 1 minute, stirring constantly, until fragrant. Do not let the garlic brown.
  4. Add the pumpkin puree, salt, black pepper, and red pepper flakes (if using). Stir well and cook for 2 minutes, stirring frequently.
  5. Pour in the vegetable broth and coconut milk. Stir to combine, scraping up any browned bits from the bottom. Bring to a gentle simmer, then reduce heat to low and cook for 10 minutes.
  6. Remove the pot from heat. Using an immersion blender, blend the soup directly in the pot until completely smooth. Alternatively, let the soup cool for 5 minutes, then blend in batches in a regular blender (fill no more than halfway, hold lid with a towel). Return blended soup to the pot.
  7. Taste and adjust seasoning: add more salt, a pinch of ginger, or a drizzle of maple syrup/honey if needed. Stir well.
  8. Ladle into bowls and garnish with a swirl of coconut milk, toasted pumpkin seeds, fresh cilantro, and a squeeze of lime if desired. Serve hot.
