  • 1/4 cup granulated sugar (50 g)
  • 1 teaspoon cinnamon
  • 1/2 cup all-purpose flour (65 g)
  • 1/2 teaspoon baking powder
  • a pinch of salt
  • 1/3 cup milk (80 ml), whole or dairy-free alternative
  • 3 tablespoons unsalted butter (42 g), melted
  • 2 tablespoons cinnamon sugar (mix 1 tablespoon sugar + 1 teaspoon cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice 2 large ripe peaches into thin wedges, about 1/4 inch thick. Toss them gently with 1/4 cup granulated sugar and 1 teaspoon cinnamon in a mixing bowl. Let sit for 5 minutes.
  3. In a separate bowl, combine 1/2 cup all-purpose flour, 1/2 teaspoon baking powder, a pinch of salt, and optionally 1 tablespoon sugar. Stir together.
  4. Pour in 1/3 cup milk and 3 tablespoons melted unsalted butter to the flour mixture. Whisk gently until just combined; batter will be lumpy.
  5. Pour the peach mixture with juices into a greased small baking dish (about 6×6 inches). Dollop the batter over the peaches, covering as much fruit as possible.
  6. Mix 1 tablespoon sugar and 1 teaspoon cinnamon, then sprinkle over the batter generously.
  7. Bake for 30-35 minutes until topping is golden brown and peach juices bubble. A toothpick inserted should come out clean or with few crumbs.
  8. Let the cobbler rest for about 10 minutes before serving.

Notes

If peaches are not juicy, add a tablespoon of water or lemon juice to the fruit mix before baking. Avoid overmixing the batter to keep topping tender. Watch oven temperature to prevent burning; tent with foil if browning too fast. Peeling peaches is easier after blanching in boiling water for 30 seconds then plunging into ice water.
