A quick and simple taco recipe using just tortillas, seasoned ground beef, and shredded cheese. Perfect for busy weeknights and casual gatherings.

  • 1 lb (450 g) ground beef (80/20 lean-to-fat ratio recommended)
  • 8 small soft corn or flour tortillas
  • 1 ½ cups (150 g) shredded cheese (sharp cheddar or Mexican blend)
  • Salt (optional)
  • Pepper (optional)
  • ½ teaspoon chili powder or cumin (optional)

Instructions

  1. Preheat a large skillet over medium-high heat for 2 minutes.
  2. Add ground beef to the skillet and break it into small pieces with a spatula. Cook for 6-8 minutes, stirring occasionally.
  3. Season the beef with salt, pepper, and optional chili powder or cumin. Stir and cook for another 2 minutes until fully browned and aromatic.
  4. Drain excess grease from the pan onto a paper towel-lined plate if necessary.
  5. Warm the tortillas by wrapping them in a damp kitchen towel and microwaving for 30 seconds or heating individually in a dry skillet for about 15 seconds per side until soft and pliable.
  6. Assemble tacos by spooning cooked beef onto each tortilla and sprinkling about 2 tablespoons (15 g) of shredded cheese on top. The residual heat will melt the cheese.
  7. Serve immediately, optionally adding toppings like salsa, avocado, or sour cream.

Notes

Do not overcook the beef to keep it juicy. Warm tortillas properly to avoid cracking. Season gradually after the beef starts browning. If beef feels dry, add a splash of water or broth while cooking. Cooking in batches prevents steaming the meat.
