  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans, 1/4 cup raisins or dried cranberries, 1/4 cup shredded coconut

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin generously with butter or non-stick spray.
  2. Prepare the apples: Wash both apples. Peel one and grate it using the large holes of a box grater. Dice the other apple into small 1/4-inch cubes. Set aside.
  3. Mix the dry ingredients: In a large bowl, combine rolled oats, cinnamon, baking powder, and salt. Whisk to distribute evenly. If adding nuts or dried fruit, stir them in now.
  4. Mix the wet ingredients: In a separate medium bowl, whisk together eggs, milk, maple syrup, melted coconut oil (or butter), and vanilla extract until smooth and slightly frothy.
  5. Combine wet and dry: Pour wet ingredients into dry ingredients. Add the grated apple (not the diced apple). Stir with a spatula until just combined (10-12 strokes). Do not overmix. Let the mixture sit for 5 minutes.
  6. Fold in the diced apple: Gently fold the diced apple into the oat mixture. Reserve a small handful for topping.
  7. Fill the muffin tin: Use an ice cream scoop or large spoon to divide the mixture evenly among the 12 muffin cups, filling almost to the top. Sprinkle reserved diced apple on top and press in gently.
  8. Bake: Place muffin tin on the middle rack. Bake for 20-25 minutes, until tops are golden brown and a toothpick inserted into the center comes out clean.
