A quick and easy fall cocktail made with apple cider and dry sparkling wine, finished with a cinnamon sugar rim. Perfect for brunch, gatherings, or a cozy evening treat.

Ingredients

Scale
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 lemon or orange wedge (for rimming)
  • 23 ounces (6090 ml) apple cider (unfiltered preferred)
  • 4 ounces (120 ml) dry sparkling wine or Prosecco (Brut or Extra Brut)
  • Ice (optional)
  • Optional garnishes: thin apple slice, cinnamon stick, star anise

Instructions

  1. On a small shallow plate, mix together 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon until uniform.
  2. Run a lemon or orange wedge around the rim of a champagne flute or wine glass to moisten it evenly.
  3. Immediately invert the glass and twist it into the cinnamon sugar mixture to coat the rim. Tap off excess. Repeat for all glasses.
  4. Pour 2-3 ounces (60-90 ml) of apple cider into each prepared glass, filling about one-third full.
  5. Slowly pour chilled sparkling wine or Prosecco down the side of the glass to fill, leaving about 1 inch of space at the top.
  6. Optionally, stir gently once with a long spoon to combine flavors, being careful not to disturb the rim or flatten the bubbles.
  7. Add optional garnish (apple slice, cinnamon stick, or star anise) and serve immediately.

Notes

Chill all ingredients and glasses beforehand for best results. Rim glasses just before serving to prevent sugar from getting sticky. Use a dry sparkling wine to balance the sweetness of the cider. For a non-alcoholic version, substitute sparkling wine with ginger ale or sparkling apple cider.
