  • 1 tablespoon (7 g) unsweetened cocoa powder
  • 1 teaspoon (5 g) baking soda
  • ½ teaspoon (3 g) salt
  • 1 cup (240 ml) buttermilk, room temperature
  • 1 cup (240 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon (5 ml) white vinegar
  • 2 teaspoons (10 ml) vanilla extract
  • 2 tablespoons (30 ml) red food coloring, gel-based preferred
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 teaspoon (5 ml) vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 8 oz (225 g) white fondant
  • A few drops red gel food coloring (for fondant stars)
  • Star-shaped cookie cutters (various sizes)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans or line with parchment paper.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, white vinegar, vanilla extract, and red food coloring until smooth and vibrant.
  4. Slowly add the wet mixture to the dry ingredients, folding gently with a rubber spatula. Do not overmix.
  5. Divide the batter evenly between the prepared pans. Tap lightly to release air bubbles.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Start checking at 25 minutes.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, beat the cream cheese and butter until creamy. Gradually add powdered sugar, beating until fluffy.
  9. Stir in vanilla extract and a pinch of salt. Add a teaspoon of milk if frosting is too thick.
  10. Place one cake layer on a serving plate and spread one-third of the frosting evenly on top.
  11. Place the second cake layer on top and cover the entire cake with the remaining frosting, smoothing it out.
  12. Tint the white fondant with red gel food coloring, kneading until color is even.
  13. Roll out fondant to about ¼ inch thickness and cut out stars using cookie cutters.
  14. Arrange fondant stars on and around the cake, pressing gently to adhere.
  15. Refrigerate the cake for at least 30 minutes before serving. Remove from fridge about 15 minutes before slicing.

Notes

Do not skip sifting dry ingredients to avoid lumps. Fold batter gently to keep air in. Use room temperature cream cheese and butter for smooth frosting. Dust fondant rolling surface with powdered sugar or cornstarch to prevent sticking. Chill cake before slicing for best texture.
