  • 1/4 cup sunflower seeds (30g)
  • 1/2 cup unsweetened shredded coconut (40g)
  • 1/3 cup honey (113g)
  • 2 tablespoons brown sugar (25g)
  • 4 tablespoons unsalted butter, melted (57g)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 ounces dark chocolate bar (70% cocoa recommended) for drizzle

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides to lift the bars out later.
  2. Spread the rolled oats, chopped nuts, sunflower seeds, and shredded coconut evenly on a baking sheet. Toast in the oven for 10-12 minutes, stirring halfway through, until golden and fragrant.
  3. While the oats and nuts toast, melt the butter, honey, and brown sugar together in a medium saucepan over low heat. Stir gently until sugar dissolves and mixture is smooth (about 3-4 minutes). Remove from heat and stir in vanilla extract and salt.
  4. Transfer the toasted oat mixture into a large mixing bowl. Pour the warm syrup over it and mix thoroughly with a spatula until every bit is coated.
  5. Immediately transfer the mixture into your prepared pan. Use the back of a spatula or lightly greased hands to press the mixture firmly and evenly to help bars hold together.
  6. Bake in the oven for 15-18 minutes. Watch closely near the end; edges should be golden brown but not burnt.
  7. Remove from oven and let cool in the pan on a wire rack for at least 30 minutes.
  8. Break the dark chocolate into small pieces and melt gently using a microwave in 20-second bursts, stirring between, or use a double boiler.
  9. Drizzle the melted chocolate over the cooled bars in zigzag patterns.
  10. Place the pan in the fridge for 10-15 minutes so the chocolate hardens.
  11. Use the parchment overhang to lift the granola slab out. Cut into bars or squares with a sharp knife.
  12. Store in an airtight container at room temperature or in the fridge.
