These crispy Parmesan zucchini fries are a quick, easy, and healthy snack made in the air fryer for a golden, crunchy texture without excess oil. Perfect for snack time or as a side dish, they are loved by zucchini skeptics and fans alike.

Ingredients

Scale
  • 2 medium zucchinis, sliced into ¾-inch thick fries
  • ½ cup finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • 1 cup panko breadcrumbs (Japanese-style preferred)
  • ½ cup all-purpose flour (can substitute with almond flour for gluten-free)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (oregano, basil, etc.)
  • Salt and black pepper to taste
  • Olive oil spray

Instructions

  1. Wash and dry the zucchinis thoroughly. Cut off the ends, then slice each zucchini lengthwise into about ¾-inch thick sticks. Pat them dry with paper towels to remove excess moisture.
  2. Set up dredging stations: place flour in one bowl, beaten eggs in another, and combine panko breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper in a third bowl. Mix well.
  3. Dredge each zucchini fry first in flour, shaking off excess. Then dip into the beaten eggs, letting extra drip off, and coat thoroughly with the breadcrumb-Parmesan mixture. Press the coating gently so it adheres well. Lay the breaded fries on a plate or baking sheet. Refrigerate for 10 minutes if coating feels loose.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Lightly spray the air fryer basket with olive oil spray. Arrange the fries in a single layer without overcrowding. Spray the tops lightly with olive oil spray.
  6. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve immediately with your favorite dipping sauce such as ranch, marinara, or garlic aioli.

Notes

Pat zucchini dry thoroughly to avoid soggy fries. Do not overcrowd the air fryer basket to ensure crispiness. Lightly spray with olive oil rather than drenching. Refrigerate breaded fries for 10 minutes if coating is loose. Preheat air fryer for best results. For gluten-free, substitute flour and panko with almond flour and gluten-free breadcrumbs. For vegan option, use flax egg and nutritional yeast instead of Parmesan.
