  • 8 bone-in, skin-on chicken thighs (about 3 pounds / 1.4 kg)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter (room temperature)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. Pat chicken thighs very dry with paper towels. In a large bowl, toss chicken with olive oil, kosher salt, black pepper, smoked paprika, and garlic powder until evenly coated.
  3. Arrange the chicken thighs skin-side up on the wire rack or directly on the foil-lined baking sheet, spacing them out to allow air circulation.
  4. Bake in the preheated oven for 30-35 minutes. Check around 20 minutes and rotate the pan if needed. The skin should be deep golden brown and crispy.
  5. While the chicken bakes, melt butter in a small saucepan over low heat or in a microwave-safe bowl. Stir in minced garlic and cook gently for 1-2 minutes until fragrant but not browned.
  6. Remove from heat and whisk in lemon juice, lemon zest, parsley, thyme, and a pinch of salt and pepper.
  7. Remove chicken from oven and let rest for 5 minutes. Spoon the lemon garlic herb butter sauce generously over each thigh.
