A quick and easy recipe for crispy buffalo wings cooked in an air fryer, served with a tangy and creamy blue cheese drizzle. Perfect for game day or casual gatherings with bold flavor and less mess than deep frying.

Ingredients

Scale
  • 2 pounds chicken wings, split into flats and drumettes, tips removed
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 cup hot sauce (preferably Frank’s RedHot)
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon white vinegar
  • 1/4 teaspoon Worcestershire sauce (optional)
  • Pinch of cayenne pepper
  • 1/2 cup blue cheese crumbles (small-curd preferred)
  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 23 tablespoons whole milk or buttermilk

Instructions

  1. Pat chicken wings dry with paper towels to ensure crispiness.
  2. Toss wings in a large bowl with baking powder, kosher salt, black pepper, and garlic powder until evenly coated.
  3. Preheat air fryer to 380°F (193°C). Arrange wings in a single layer without overcrowding; cook in batches if needed.
  4. Air fry wings for 25-30 minutes, shaking the basket every 8-10 minutes for even cooking, until golden and crispy with an internal temperature of 165°F (74°C).
  5. While wings cook, melt butter in a small saucepan over low heat. Stir in hot sauce, white vinegar, Worcestershire sauce, and cayenne pepper. Heat gently and remove from heat.
  6. Transfer cooked wings to a large bowl and toss with buffalo sauce until evenly coated.
  7. In a small bowl, whisk together blue cheese crumbles, sour cream, mayonnaise, and lemon juice. Gradually add milk until drizzle reaches a pourable consistency. Season with salt and pepper.
  8. Serve wings immediately, drizzled with blue cheese sauce or serve sauce on the side for dipping. Garnish with chopped parsley or celery sticks if desired.

Notes

Pat wings dry thoroughly before seasoning to ensure crispiness. Use baking powder, not baking soda, to avoid metallic taste. Do not overcrowd the air fryer basket to prevent steaming. Shake or flip wings during cooking for even crisping. Adjust cayenne and hot sauce to control heat level. Thin blue cheese drizzle with milk or buttermilk if it thickens. For extra crispiness, increase air fryer temperature to 400°F for last 5 minutes but watch carefully to avoid burning. Store leftovers in airtight container and reheat in air fryer at 350°F for 5-7 minutes to maintain crispness.
