  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

  • ¼ teaspoon black pepper
  • ½ cup buttermilk
  • ⅓ cup buffalo sauce (preferably Frank’s RedHot Original)
  • 1 tablespoon melted butter
  • Optional garnishes: ranch or blue cheese dressing, chopped green onions, celery sticks

Instructions

  1. Prep the cauliflower: Wash the cauliflower head and cut it into bite-sized florets (about 1½ inches each). Pat them completely dry with a clean kitchen towel.
  2. Mix the dry coating: In a large bowl, whisk together the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly distributed.
  3. Prepare the wet mixture: Pour the buttermilk into a separate bowl.
  4. Double-coat the florets: Working in batches, dip each floret first into the flour mixture, shaking off excess. Then dip into the buttermilk, letting excess drip off. Finally, dip back into the flour mixture for a second coating. Place coated florets on a plate or baking sheet.
  5. Preheat the air fryer: Set your air fryer to 375°F and preheat for 3 minutes.
  6. Arrange in the basket: Lightly spray the air fryer basket with cooking spray. Place coated florets in a single layer, making sure they’re not touching. Work in batches as needed.
  7. Air fry the first batch: Cook at 375°F for 10-12 minutes, shaking the basket halfway through, until golden brown and crispy.
  8. Make the buffalo sauce: While the first batch cooks, melt the butter in a small saucepan over low heat or in a microwave-safe bowl (15-second intervals). Whisk in the buffalo sauce until smooth.
  9. Toss in sauce: Transfer cooked florets to a large bowl. Pour about half the buffalo sauce over them and toss gently with tongs until evenly coated. Add more sauce as needed.
  10. Repeat with remaining batches: Cook remaining florets, tossing each batch with sauce immediately after cooking.
  11. Serve immediately: Transfer to a serving platter, garnish with chopped green onions if desired, and serve with ranch or blue cheese dressing on the side.

Notes

For the crispiest results, make sure cauliflower is completely dry before coating. Don’t skip the double-coating technique. Toss in sauce immediately after cooking while still hot. Best eaten within 15 minutes of cooking. For gluten-free, use ⅓ cup almond flour. For dairy-free, use plant-based milk with lemon juice and vegan butter.
