  • 8 oz block cream cheese, softened and cut into cubes
  • 8 oz sharp cheddar cheese, freshly shredded
  • 4 oz Monterey Jack cheese, freshly shredded
  • 1/4 cup milk (whole milk preferred)
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients first. Dice the onion, mince the garlic, shred both cheeses, and cut the cream cheese into cubes. Slice the smoked sausage into rounds about 1/4-inch thick. Set the cream cheese on the counter to soften.
  2. Brown the sausage. Heat a large skillet over medium-high heat. Add the sliced sausage in a single layer and cook undisturbed for 2-3 minutes until deeply browned. Flip and cook another 2 minutes. Transfer to a plate and set aside. Leave about 1 tablespoon of rendered fat in the pan.
  3. Sauté the aromatics. Reduce heat to medium. Add the butter to the same pan and let it melt. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Start the cheese base. Transfer the onion and garlic mixture to a medium saucepan or Dutch oven. Add the entire can of Rotel (undrained) and the cubed cream cheese. Cook over medium-low heat, stirring gently, until the cream cheese melts (about 2-3 minutes).
  5. Add the shredded cheeses gradually. Once the cream cheese is mostly melted, add the shredded cheddar and Monterey Jack a handful at a time, stirring continuously in a figure-eight motion. Pour in the milk as you go to help thin the sauce.
  6. Season and combine. Once all cheese is melted and the sauce is smooth, stir in the smoked paprika and cumin. Taste and add salt and pepper as needed. Return the browned sausage to the pot and stir to distribute. Let simmer for 2-3 minutes on low heat.
  7. Check the consistency. The queso should be thick enough to coat a chip but still pourable. If too thick, add milk one tablespoon at a time. If too thin, let it simmer for another minute or two.
  8. Serve immediately. Transfer to a serving bowl and garnish with optional toppings. Serve with tortilla chips, pretzel bites, or fresh vegetables.

Notes

Don’t skip browning the sausage—it adds deep smoky flavor. Always shred your own cheese from a block to avoid grainy texture. Let cream cheese come to room temperature before adding to prevent clumping. For make-ahead, brown sausage and sauté onions up to a day in advance. Leftovers keep in the fridge for up to 4 days; reheat gently on the stovetop with a splash of milk.
