A simple, creamy, and hearty slow cooker soup featuring white beans and kale, perfect for cozy dinners and potlucks. This recipe uses pantry staples and requires minimal prep.

  • 3 cups cooked white beans or 2 cans (15 oz each) cannellini or great northern beans, rinsed and drained
  • 4 cups chopped kale, tough stems removed
  • 4 cups (32 fl oz) low sodium vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 large carrot, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: red pepper flakes, 1/4 cup grated Parmesan cheese

Instructions

  1. Prep the veggies: dice onion, carrot, and celery; remove kale stems and chop leaves; mince garlic.
  2. Optional: In a skillet, heat olive oil over medium heat. Sauté onion, carrot, and celery until softened, about 5-7 minutes. Stir in garlic and cook 1 more minute.
  3. Transfer sautéed veggies (or raw if skipping step 2) to the slow cooker. Add white beans, kale, vegetable broth, rosemary, thyme, bay leaves, salt, and pepper.
  4. Cook on low for 6-7 hours or on high for 3-4 hours until flavors meld and kale softens.
  5. About 30 minutes before serving, remove bay leaves. Use an immersion blender to puree roughly half the soup directly in the pot to create a creamy texture. If using a regular blender, blend in batches and stir back in.
  6. Stir in lemon juice and adjust seasoning with salt and pepper as needed.
  7. Serve hot, optionally topped with grated Parmesan cheese.

Notes

If soup is too thick after pureeing, stir in more broth or water to reach desired consistency. Keep lid slightly ajar during last hour to reduce liquid for richer soup. Add kale in last 30-45 minutes to keep it vibrant and tender. Parmesan adds saltiness, so adjust salt accordingly. Can substitute kale with spinach or Swiss chard. For vegan version, omit Parmesan or use nutritional yeast.
