  • 2 pounds russet potatoes (about 4 medium), peeled and cut into 1-inch cubes
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened and cut into small cubes
  • 1 cup frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Pinch of cayenne pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: Slice sausage into 1/4-inch rounds. If desired, sear in a hot skillet for 2-3 minutes per side until browned. Peel and dice onion, mince garlic, and cut potatoes into 1-inch cubes.
  2. Layer in the slow cooker: Place potatoes, onion, and half the minced garlic in the bottom. Sprinkle with smoked paprika, thyme, salt, pepper, and cayenne. Toss gently. Lay sausage slices on top. Pour chicken broth over everything. Do not stir.
  3. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until potatoes are fork-tender.
  4. Add creamy elements: In the last 30 minutes, turn slow cooker to HIGH if not already. Add cream cheese cubes and remaining minced garlic. Stir gently until cream cheese mostly melts. Pour in heavy cream and frozen corn. Stir again. Cook for 20-30 minutes until thickened.
  5. Taste and adjust: Add more salt, pepper, or smoked paprika as needed.
  6. Serve and garnish: Ladle into bowls, garnish with fresh parsley, and serve hot with crusty bread or a side salad.

Notes

For a thicker soup, mash a few potato chunks against the side of the slow cooker. Add dairy only in the last 30 minutes to prevent curdling. The soup tastes even better the next day.
