  • 1 cup roasted Hatch chiles, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium russet potatoes, diced into 1/2-inch cubes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Optional toppings: crumbled bacon, shredded cheddar cheese, chopped cilantro, sliced green onions, crushed tortilla chips, sour cream

Instructions

  1. Prep your vegetables: Dice the onion, mince the garlic, and dice the potatoes into 1/2-inch cubes.
  2. Melt the butter in a large pot over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Stir in the smoked paprika and cumin. Toast for 20-30 seconds until aromatic.
  4. Add the diced potatoes and frozen corn. Stir to coat in the spiced butter mixture and cook for about 2 minutes.
  5. Pour in the broth and chopped Hatch chiles. Bring to a gentle boil, then reduce heat to a simmer. Cook for 15 minutes until potatoes are tender.
  6. Remove from heat. Using an immersion blender, blend about half of the chowder until creamy but still chunky. Alternatively, transfer half to a regular blender, blend, and return to the pot.
  7. Stir in the heavy cream. Season with salt and pepper to taste.
  8. Simmer for 2-3 minutes to heat through. Serve hot with desired toppings.

Notes

For a dairy-free version, use olive oil instead of butter and full-fat coconut cream instead of heavy cream. The chowder tastes even better the next day as flavors meld. Reheat gently to avoid curdling.
