This velvety, golden-orange soup is made with roasted butternut squash and fresh sage, resulting in a rich, comforting bowl of autumn flavor. It’s easy to make, naturally gluten-free and vegetarian, and perfect for chilly evenings.

  • 1 large butternut squash (about 3 pounds), peeled and cut into 1-inch cubes
  • 1012 fresh sage leaves
  • 1 medium yellow onion, diced
  • 4 cloves garlic, unpeeled
  • 3 tablespoons olive oil, divided
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Optional garnishes: toasted pumpkin seeds, extra crispy sage leaves, drizzle of cream, smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a rimmed baking sheet, toss the cubed squash, sage leaves, and unpeeled garlic cloves with 2 tablespoons olive oil, salt, and pepper. Spread in a single layer.
  3. Roast for 25-30 minutes, flipping halfway, until squash is tender and caramelized, sage is crispy, and garlic is soft.
  4. While squash roasts, heat remaining 1 tablespoon olive oil in a large pot over medium heat. Add diced onion and a pinch of salt; cook 5-7 minutes until soft and translucent.
  5. Squeeze roasted garlic from skins into the pot. Add roasted squash and crispy sage (reserve a few leaves for garnish if desired). Pour in vegetable broth and stir.
  6. Bring to a gentle simmer, then reduce heat to low and cook for 5 minutes. Remove from heat.
  7. Blend soup until smooth using an immersion blender or regular blender (in batches, being careful with hot liquid).
  8. Stir in heavy cream and warm over low heat for 2-3 minutes. Adjust seasoning with salt and pepper.
  9. Ladle into bowls and garnish as desired. Serve hot.

Notes

For best flavor, roast squash until well caramelized. Fresh sage is essential; dried sage will not provide the same depth. If soup is too thick, add more broth; if too thin, simmer uncovered to reduce. Season in layers for best results.
