  • 1/2 cup (120ml) milk (any kind)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon (2.5ml) vanilla extract (optional)

Instructions

  1. Slice the banana into thin rounds, about 1/4-inch thick. Set aside 5-6 slices for topping in the morning.
  2. In a jar or container, combine 1/2 cup rolled oats, 1 tablespoon chia seeds (if using), and a tiny pinch of salt. Stir to distribute.
  3. Pour in 1/2 cup milk, 1/2 teaspoon vanilla extract (if using), and 1 tablespoon maple syrup or honey (if using). Stir gently.
  4. Spoon 2 tablespoons of creamy peanut butter into the center of the mixture. Do not stir it in completely; leave it in dollops.
  5. Gently press most of the banana slices into the oat mixture, pushing them down so they are mostly submerged.
  6. Give everything a few gentle stirs to combine, but keep distinct ribbons of peanut butter.
  7. Seal the container and refrigerate for at least 6 hours, preferably 8-12 hours (overnight).
  8. In the morning, stir the oats. If too thick, add a splash of milk. Top with reserved banana slices and optional toppings like extra peanut butter, cinnamon, or chopped peanuts.
  9. Serve cold or let sit at room temperature for 10 minutes. Enjoy!

Notes

Use a ripe banana with brown spots for best sweetness. Do not over-stir the peanut butter to keep distinct swirls. For meal prep, add fresh banana slices each morning if storing for more than 3 days. The oats can be microwaved for 45-60 seconds if you prefer them warm.
