  • 1 pound (450 g) peeled and deveined medium to large shrimp
  • 1/3 cup (about 50 g) chopped sun-dried tomatoes packed in oil
  • 1/4 cup loosely packed fresh basil, chopped
  • 1 cup (240 ml) heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup (25 g) freshly grated Parmesan cheese
  • 1/4 cup (60 ml) white wine (optional)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Rinse 1 pound peeled, deveined shrimp under cold water and pat dry with paper towels. Set aside.
  2. Heat 2 tablespoons olive oil over medium heat in a large skillet until shimmering but not smoking, about 1 minute.
  3. Add 3 minced garlic cloves and cook for 30 seconds to 1 minute until fragrant but not browned.
  4. Stir in 1/3 cup chopped sun-dried tomatoes and cook for 1-2 minutes to release flavor.
  5. Pour in 1/4 cup white wine (optional) and simmer for 2-3 minutes until reduced by half.
  6. Lower heat to medium-low and stir in 1 cup heavy cream and 1/4 cup grated Parmesan cheese. Simmer gently, stirring occasionally, until sauce thickens slightly, about 3-5 minutes.
  7. Add shrimp in a single layer to the pan. Cook for 2-3 minutes on one side until just pink, then flip and cook another 2 minutes until opaque and tender.
  8. Season with salt, pepper, and a pinch of red pepper flakes if using. Taste and adjust seasoning.
  9. Remove pan from heat and stir in 1/4 cup chopped fresh basil just before serving.

Notes

If sauce is too thick, add a splash of chicken broth or water to loosen. If too thin, simmer gently until reduced. Avoid overcooking shrimp to prevent rubbery texture. Add fresh basil at the end to preserve flavor. For dairy-free version, substitute heavy cream with coconut cream and omit Parmesan or use dairy-free cheese.
