  • 1.5 lbs (680g) chicken breast, diced into bite-sized pieces
  • 1/2 cup (60g) sun-dried tomatoes (packed in oil), chopped
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups (960ml) chicken broth (low-sodium recommended)
  • 1 cup (240ml) heavy cream
  • 1/2 cup grated Parmesan cheese (freshly grated)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, or to taste)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil or parsley for garnish

Instructions

  1. Prep all ingredients: dice onion, carrots, celery; mince garlic; chop sun-dried tomatoes; cut chicken into bite-sized pieces.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook for 5-7 minutes until softened and onion is translucent.
  3. Add minced garlic and cook for 1 minute, stirring constantly to prevent burning.
  4. Season chicken pieces with a pinch of salt and pepper. Add to the pot and cook for 5-6 minutes, until no longer pink on the outside.
  5. Stir in chopped sun-dried tomatoes, dried thyme, dried oregano, and red pepper flakes. Cook for 1 minute.
  6. Pour in chicken broth, scraping up any browned bits from the bottom. Bring to a gentle boil, then reduce heat to low and simmer for 15 minutes, until chicken is cooked through.
  7. Reduce heat to low. Stir in heavy cream gently; do not let the soup boil.
  8. Add grated Parmesan cheese a handful at a time, stirring after each addition until melted and smooth.
  9. Taste and adjust seasoning with salt, pepper, or more red pepper flakes as needed.
  10. Remove from heat and let rest for 5 minutes before serving. Garnish with fresh basil or parsley.

Notes

For a lighter version, use half-and-half instead of heavy cream. To prevent cream from curdling, do not let the soup boil after adding cream. Leftovers keep in the refrigerator for up to 4 days; reheat gently on the stovetop. Freezing is not recommended for cream-based soups.
