  • 1/2 cup toffee bits (Heath bar bits or chopped toffee candy)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. If forgotten, microwave unwrapped for 10-15 seconds on low power until soft but not melted.
  2. Whip the cream cheese base: In a large mixing bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down sides halfway through.
  3. Add sugar and vanilla: Add powdered sugar and vanilla extract. Beat on low until combined, then increase to medium and beat for 1 minute until light and fluffy with no white streaks.
  4. Whip the heavy cream: In a separate bowl, pour cold heavy cream. Using clean beaters, whip on medium-high speed until stiff peaks form, about 3-4 minutes.
  5. Fold it all together: Gently fold whipped cream into cream cheese mixture using a rubber spatula with a cutting motion. Fold until just combined with no white streaks remaining.
  6. Add the caramel: Drizzle 1/4 cup caramel sauce over the cream cheese mixture. Give a few gentle folds to create swirls, leaving ribbons of caramel.
  7. Prepare the apples: Dice apples into small bite-sized pieces. Toss with lemon juice in a small bowl to prevent browning.
  8. Assemble the dip: Spread cream cheese mixture into serving dish. Top with diced apples, spreading evenly. Sprinkle toffee bits over everything, and add pecans if using.
  9. Finish with a drizzle: Drizzle additional caramel sauce over the top in a decorative pattern (zigzag or spiral).
  10. Chill (optional but recommended): Refrigerate for about 30 minutes before serving to meld flavors. Can serve immediately if desired.

Notes

Cream cheese must be softened to room temperature for smooth texture. Do not overwhip cream or it will turn to butter. Fold gently to preserve airy texture. Dip tastes better after a few hours in the fridge. Store apples and toffee bits separately if making ahead. Not recommended for freezing.
