Creamy Burrata Toast with Marinated Cherry Tomatoes

A quick and easy toast recipe featuring creamy burrata, marinated cherry tomatoes, and crispy sourdough bread. Ready in under 15 minutes, it’s perfect for a light lunch, appetizer, or brunch.

  • 2 cups cherry tomatoes, halved
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, thinly sliced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 810 fresh basil leaves, torn
  • 4 thick slices sourdough bread
  • 2 tablespoons olive oil (for brushing bread)
  • 1 clove garlic, halved (for rubbing toast)
  • 2 balls burrata cheese (about 4 ounces each)
  • Flaky sea salt for finishing
  • Red pepper flakes (optional)

Instructions

  1. Halve cherry tomatoes and add to a medium bowl. Add sliced garlic, torn basil, balsamic vinegar, olive oil, salt, and pepper. Toss gently with hands. Let sit at room temperature for at least 10 minutes, stirring once halfway.
  2. Slice sourdough into ¾-inch thick pieces. Brush both sides lightly with olive oil.
  3. Remove burrata from fridge and let sit at room temperature for 15 minutes.
  4. Heat a cast-iron skillet over medium heat for 2 minutes. Place oiled bread in skillet and cook for 2-3 minutes per side until deep golden brown.
  5. As soon as toast comes out of the pan, rub the cut side of the garlic clove firmly over one side of each piece.
  6. Place warm toast on serving plates. Tear each burrata ball in half and place one half on each slice of toast. Gently press and spread with the back of a fork.
  7. Spoon marinated tomatoes and their juices over the burrata.
  8. Sprinkle with flaky sea salt and optional red pepper flakes. Drizzle any remaining olive oil from the tomato bowl over everything.
  9. Serve immediately.

Notes

Don’t assemble toasts until ready to eat; bread softens within 5 minutes. For best results, let tomatoes marinate at least 10 minutes (up to 1 hour). Burrata should be at room temperature for easy spreading. Use a sturdy bread like sourdough or ciabatta to prevent sogginess.
