Cozy Slow Cooker Loaded Baked Potato Soup Recipe with Bacon and Chive Cream

A creamy and comforting slow cooker baked potato soup loaded with crispy bacon and topped with fresh chive cream, perfect for cold days.

  • 6 medium russet potatoes, peeled and diced
  • 6 slices thick-cut bacon, chopped
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth (950 ml)
  • 1 cup heavy cream (240 ml)
  • 1 ½ cups sharp cheddar cheese, shredded (170 g)
  • ½ cup sour cream (120 ml)
  • 2 tbsp fresh chives, finely sliced
  • 3 tbsp all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp butter

Instructions

  1. Cook the bacon in a large skillet over medium heat until crisp, about 6–8 minutes. Transfer bacon to a paper towel-lined plate, leaving the rendered fat in the skillet. Save 1-2 tablespoons of bacon fat for extra flavor.
  2. Add butter to the bacon fat and melt over medium heat. Sauté chopped onion until translucent and soft, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant. Remove from heat.
  3. Transfer sautéed onion and garlic to the slow cooker. Add diced potatoes, crispy bacon (reserve 1 tablespoon for garnish), and chicken broth. Season with salt and pepper. Stir gently to combine.
  4. Cover and cook on low for 6 hours or on high for 3–4 hours, until potatoes are tender and easily pierced with a fork.
  5. About 30 minutes before serving, whisk flour into heavy cream until smooth. Slowly stir this mixture into the soup in the slow cooker. Recover and cook on high for the remaining time to thicken the soup.
  6. Stir in shredded cheddar cheese until melted and smooth. Taste and adjust seasoning with salt and pepper if needed.
  7. Mix sour cream and finely chopped fresh chives with a pinch of salt in a small bowl to prepare the chive cream topping.
  8. Ladle soup into bowls and garnish with a dollop of chive cream and reserved crispy bacon pieces. Optionally, sprinkle additional fresh chives on top.

Notes

For gluten-free, substitute all-purpose flour with cornstarch slurry. Use half-and-half instead of heavy cream for a lighter soup. Crisp bacon before adding to soup for best texture. Stir cheese in slowly to avoid clumping. Soup thickens as it cools; add broth or milk to loosen if needed. Chive cream topping is best made fresh each time.
