  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups (960 ml) low-sodium chicken broth
  • 1 can (10.5 oz / 298g) condensed cream of chicken soup
  • 1 cup (150g) frozen peas
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 1.5 cups (180g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon dried parsley (optional)
  • 3 tablespoons cold unsalted butter, cubed
  • ¾ cup (180 ml) whole milk

Instructions

  1. Prep the chicken and vegetables: Pat chicken thighs dry, season generously with salt and pepper. Dice onion, slice carrots and celery, mince garlic.
  2. Layer ingredients in slow cooker: Place seasoned chicken thighs in bottom. Scatter onion, carrots, celery, and garlic over top. Sprinkle thyme and rosemary over vegetables. Nestle bay leaf in.
  3. Add liquids and butter: Whisk together chicken broth and cream of chicken soup until smooth. Pour over chicken and vegetables. Dot with 2 tablespoons butter, cut into small pieces. Do not stir.
  4. Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and shreds easily.
  5. Shred the chicken: About 30 minutes before serving, remove chicken to a cutting board. Shred with two forks. Discard bay leaf. Return shredded chicken to slow cooker. Stir in frozen peas.
  6. Make dumpling dough: In a large bowl, whisk together flour, baking powder, salt, and dried parsley. Add cold cubed butter. Cut in with pastry cutter or forks until mixture resembles coarse crumbs with pea-sized butter pieces. Pour in cold milk and stir with fork just until shaggy dough forms. Do not overmix.
  7. Add dumplings: Drop dough by heaping tablespoonfuls onto surface of simmering stew, spacing them out. Do not press into liquid.
  8. Cook dumplings: Cover and cook on high for 35-45 minutes. Do not lift lid during this time. Dumplings are done when puffed and a toothpick inserted in center comes out clean.
  9. Rest and serve: Turn off slow cooker and let rest 5 minutes. Ladle into bowls, garnish with fresh parsley if desired.

Notes

Don’t lift the lid during dumpling cooking to ensure they steam properly. Use cold butter for dumplings to achieve fluffiness. If broth is too thin, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir in before adding dumplings. Season chicken well for best flavor.
